“Menya Butakong” Niigata Nagaoka ginger soy sauce ramen is deeply-flavored yet light

A restaurant where you can enjoy Niigata's Nagaoka-style ramen, an unusual dish in the Kansai region

For lunch today, I visited Menya Butakong, a ramen restaurant in Togano-cho, Kita Ward. I made my very first visit to this restaurant where you can enjoy Niigata’s Nagaoka-style ramen, an unusual dish in the Kansai region!

Niigata Nagaoka ginger soy sauce ramen (¥720)

The soup is dark colored but clear and has the appearance of a thick chuka-soba soup, but…

oooh, so delicious!!

Apparently, this is a clear tonkotsu broth. I noticed, however, that it has a characteristic light umami flavor, and the other thing that makes this a totally new sensation is the fragrant ginger!

This is a really deep, complex taste, and the more you have, the crazier you get about it! I suppose it’s because of the ginger, but it’s so lovely the way that it warms your body up. 🙂


Straight, semi-thick noodles…



These noodles, that slide down so easily, are really flavorsome!


Rare char siu…



This is packed full of umami flavor and would be superb with a beer. 🙂


Dragon screw (comes as a set with ramen at lunchtime for ¥180)

This dish is made with exceptionally dark colored egg yolks. It’s topped with tempura chips and green onion and finished with a specially-made sauce.


I mixed it all up and…


it was fantastic!!

The umami of the sauce matches perfectly with that of the thick egg yolk! The crunchy tempura chips are so lovely too!




All of the four ramen dishes on offer are so appealing that I’d love to conquer them all!


This restaurant’s lunchtime opening hours are nice and long, which makes me really happy!

I’d really love to go again to try other ramen dishes for you!
